Sweet Potato Cranberry Bake

I just made this last night and had to share with all of you. With Thanksgiving coming up, many are looking for new and fun ways to present the familiar. It’s almost like a fruit crisp, but made out of potatoes and cranberries. Sweet and tart all at the same time!

Sweet Potato Cranberry Bake

Mix:
½ cup brown sugar
½ cup flour
½ cup Quick Oats
½ cup butter
1 tsp cinnamon

In a separate bowl:
About 2 lbs of either canned or fresh, cooked yams – mashed
2 cups fresh cranberries (my friend used frozen with great results!)

Mix yams, berries and 1 cup crumb mixture and turn into baking dish. Sprinkle remaining crumb mix on top and bake about 1 hour at 350 degrees.

I’ll post a photo if there’s still some left when the camera batteries are done charging!
